Preparation tips
- Place the rice in a pan of salted water and cook for 10 minutes. from boiling.
- Slice the onion and chop the ginger. (You can reduce the amount of ginger if you like milder flavors).
- Wash and cut the peppers into small cubes.
- Heat 1 tbsp of olive oil in a pan and brown the onion and ginger for 2 minutes.
- Add the cubed peppers and continue cooking for 10 minutes. stirring them from time to time.
- Peel and cut the mango into small cubes.
- Drain the rice.
- Pour the cut mango and the shrimp into the pan, add salt and pepper, and fry for 5 minutes. Add the spices.
- Serve immediately with the rice.
